Negroni
As Italian as a Vespa but with more bracing zip, the Negroni is not for the faint of heart. A healthy jigger of Campari adds a complex bitterness, which is the essence of the drink. If you find it a little too intense, you can cut back on the sweet vermouth and add a dash of fresh orange juice (see Cook’s note); it’s not traditional, but it is smoother.
Ingredients
Ice cubes
2 ounces (1⁄4 cup) gin
2 ounces (1⁄4 cup) Campari
2 ounces (1⁄4 cup) sweet vermouth
SPECIAL EQUIPMENT: a cocktail shaker; a cocktail strainer
Instructions
FILL COCKTAIL SHAKER HALF FULL with ice. Add remaining ingredients and shake for 15 seconds. Strain into two 10- to 12-ounce old-fashioned glasses filled with ice.
COOK’S NOTE
For a smoother-tasting drink, reduce the amount of vermouth to 1 ounce (2 tablespoons) and add 1⁄2 cup fresh orange juice.
