Jasmine Rice Pilaf with Mustard Seeds

Mustard seeds add a delicate crunch and gentle bite to this pilaf, which goes well with most poultry or meats.

Ingredients

1 tablespoon vegetable oil

1⁄4 cup thinly sliced shallots

1 tablespoon mustard seeds

1 cup jasmine or long-grain white rice

1 3⁄4 cups water

3⁄4 teaspoon salt

1⁄4 cup thinly sliced scallion greens

Instructions

HEAT OIL IN A 1 1⁄2 - to 2-quart heavy saucepan over moderately low heat until hot but not smoking. Add shallots and cook, stirring occasionally, until pale golden, about 6 minutes. Add mustard seeds and cook, stirring occasionally, for 1 minute. Stir in rice and cook, stirring occasionally, for 1 minute. Add water and salt and bring to a boil. Stir rice once, reduce heat to low, and cook, covered, for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

Fluff rice gently with a fork and stir in scallions.
